Salt production once shaped the location of entire towns, built around evaporation ponds or brine wells long before refrigeration made preservation less urgent. Traditional producers still flood shallow coastal pans and rely on sun and wind to concentrate the brine over several weeks, a method largely unchanged for centuries in some regions. Industrial producers, by contrast, now extract salt through solution mining, pumping water underground to dissolve deposits and drawing the resulting brine to the surface for processing, a faster method that has largely displaced pan evaporation in bulk commodity production.
